Blueberry Buckle




Blueberry Buckle

1/2 C. shortening
3/4 C. sugar
1 egg, well beaten
2 C. sifted flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1/2 C. milk
2 C. fresh blueberries
Cinnamon Crumbs (below)

Cream shortening and sugar. Add egg and beat well. Sift flour, baking powder and salt together; add alternately with milk. Spread in greased 11x7x1 1/2-inch pan or dish. Top with blueberries and sprinkle cinnamon crumbs on top. Bake at 350 degrees for 45 minutes. Cut into squares to serve. Serve warm with ice cream or cream, if desired. Serve 8 to 10.

Cinnamon Crumbs:
1/2 C. sugar
1/2 C. sifted flour
1/2 tsp. cinnamon
1/4 C. butter or margarine

Combine all ingredients and mix until crumbly. A fork works well.
